Ingredients
- Chilli
- Cashew
- Watermelon seeds
- cornflour
- dry mango
- coriander seeds
- fennel seeds
- turmeric
- kasuri methi
- cumin seeds
- black pepper
- mustard seeds
- fenugreek seeds
- sugar
- Salt & Spices all in dry powder form.
Method
- Heat 2 tbsp mustard oil until it smokes, then let it cool slightly (this mellows the pungency). Reheat the oil and add 1 cup tomato puree and 1 tsp ginger juliennes. Sauté until the oil starts to separate.
- Stir in 1.5 tbsp Galaji Achari Paneer Masala and 2 tbsp whisked yogurt (keep heat low to prevent curdling).
- Toss in 250g paneer cubes. Add a splash of water and simmer for 5 minutes.
- Garnish with fresh coriander.
- For Onion/Garlic Lovers: Before adding the tomato puree, sauté 1 finely chopped onion and 4-5 cloves of minced garlic in the oil until golden brown.
