How to Make Panchmel Sabji at Home (Step-by-Step)
Ingredients
  • Skimmed Milk Powder
  • Sugar
  • Cashew Nuts
  • Cornflour
  • Watermelon Seeds
  • Coriander
  • Turmeric
  • Dried Fenugreek Leaves (Kasuri Methi)
  • Green Chilli Powder
  • Salt & Spices all in dry powder form.
Method
  • Prepare a mix of 5 vegetables (typically Gawar Phali, Ker, Sangri, Carrots, and Potatoes—or any 5 seasonal favorites like Peas, Cauliflower, Beans, etc.).
  • Heat 2 tbsp ghee/oil.
  • Add a pinch of mustard seeds and cumin and 2 chopped green chilies.
  • Add the vegetables and sauté for 2 minutes.
  • Stir in 2 tbsp Galaji Rajasthani Panchmel Sabji Masala.
  • Add a splash of water, cover, and cook on low heat until the vegetables are tender.
  • For Onion/Garlic Lovers: Sauté 1 large chopped onion and 1 tsp garlic paste in ghee until golden brown before adding the vegetables for a more pungent, "dhaba-style" version.
