Ingredients

Method
- Pressure cook 2 cups of sprouted Matki (moth beans) with water, turmeric, and a little salt until tender. Do not discard the water; it contains the essence needed for the "Usal."
- Add 2 tbsp Oil in a deep pot. Add 1 tsp Mustard seeds and a few Curry leaves. Add 1 finely chopped tomato. Cook until the tomatoes are soft.
- Add 2 Tablespoons of Galaji Puneri Matki Misal Masala. Add the boiled Matki along with its cooking water. Add more hot water to keep the consistency thin and soupy. Let it simmer for 5–7 minutes. Stir in fresh coriander.
- erve the hot Usal topped with Puneri Farsan, Pav and a lemon wedge. For Onion & Garlic Lovers: Sauté 1.5 tbsp of fresh Garlic paste , 1 Finely chopped Onions.
