Ingredients
- Corrainder seeds
- chilli
- ginger
- green chilli
- dry mango
- turmeric
- cumin seeds
- black pepper
- carom seeds
- Salt & Spices all in dry powder form.
Method
- Roast a large eggplant (Baingan) over an open flame until the skin is charred and the inside is soft.
- Peel and mash the pulp.
- Heat 2 tbsp oil in a pan.
- Add 1.5 cups of finely chopped tomatoes.
- Cook until the tomatoes turn mushy and release oil.
- Stir in 1.5 tbsp Galaji Baingan Bharta Masala and 2-3 chopped green chilies.
- Sauté for a minute to let the spices bloom.
- Add the mashed eggplant and salt.
- Mix thoroughly and cook on medium heat for 5-7 minutes, stirring occasionally to let the flavors meld.
- Garnish with plenty of fresh coriander.
- For Onion/Garlic Lovers: Sauté 2 large finely chopped onions and 1 tsp garlic paste in the oil until translucent before adding the tomatoes.
