Ingredients

Method
- Pressure cook 100g of Arhar dal (Toor dal) with 2 cups of water for about 20–30 minutes until mushy
- Add chopped drumsticks, pumpkin, carrots, or any veggies of your choice to the dal. Simmer until the vegetables are tender. Stir in 1-2 tbsp of tamarind paste (optional for tanginess) and 1 big spoon of Galaji Udupi Sambhar Masala. Add salt to taste.
- Note: This recipe is naturally No Onion and No Garlic. If you prefer the standard version, you may add sautéed shallots (small onions) during the tempering stage. Heat 1 tbsp of oil or ghee in a small pan. Add 1 tsp mustard seeds, 2 dried red chillies, and a sprig of fresh curry leaves. Once the

- Once the seeds crackle, pour this tadka into the boiling dal mixture.
- Let the Sambhar boil for another 2 minutes to allow the flavors to meld. Serve hot with steamed idlis, crispy dosas, or uttapams.
