Method
- Heat 2 tablespoons of oil, butter, or ghee in a large flat pan or kadai.
- Add 2 roughly mashed tomatoes. Optional: If you prefer the standard version, sauté 1 finely chopped onion and 1 teaspoon of ginger-garlic paste before adding the tomatoes.
- Add 2 tablespoons of Galaji Mumbai Pav Bhaji Masala. Let it cook on medium heat until the fat begins to separate and the tomatoes are soft.
- 500g of boiled and mashed vegetables. For a traditional mix, use potatoes, green peas, and cauliflower. Jain Variation: Replace potatoes with boiled raw bananas.
- Mix well, adding a little water to reach the desired consistency. Use a masher to blend everything into a smooth, thick gravy. Let it cook for 2–3 minutes. Garnish with generous teaspoon of butter & fresh corriander. Serve Hot, Buttery Pav & wedge of lemon.
