Ingredients
- Chilli
- Coriander seeds
- Green chilli
- Cumin seeds
- Black pepper
- Turmeric
- Salt & Spices all in dry powder form
- Contain Cotton seed oil
Method
- Par-boil 2 cups of mixed vegetables (cauliflower, beans, carrots, peas).
- Deep-fry 100g paneer cubes and set aside.
- Heat 2 tbsp oil in a kadhai.
- Add 1.5 cups tomato puree.
- Sauté until the oil floats on top.
- Stir in 2 tbsp Galaji Vegetable Kolhapuri Sabji Masala.
- Add the vegetables and paneer with 1 cup of water.
- Simmer for 5-7 minutes.
- Garnish with fresh coriander and a lemon wedge.
- Pair with Bhakri, Phulka, or steamed rice to balance the heat.
- For Onion/Garlic Lovers: Sauté 1 large finely chopped onion and 1 tbsp of garlic paste until dark brown (almost caramelized) before adding the tomato puree for a truly rustic, "Dhaba-style" Kolhapuri.
