How to Make Kolhapuri Dal Masala at Home (Step-by-Step)
Ingredients
  • Coriander seeds
  • Cumin seeds
  • Chilli
  • Green chilli
  • Black pepper
  • Turmeric
  • Lentils
  • Curry leaves
  • Salt & Spices all in dry powder form
  • Contain Cottonseed oil
Method
  • Pressure cook 1 cup of Toor Dal (Arhar) with turmeric until very soft.
  • Whisk until smooth.
  • Heat 2 tbsp oil (or peanut oil for authenticity).
  • Add a pinch of mustard seeds.
  • Stir in 2 tbsp Galaji Kolhapuri Dal Masala.
  • Add 1 cup of tomato puree and sauté until the oil starts to separate and the masala smells smoky.
  • Add the cooked dal and 1 cup of water.
  • Simmer for 10 minutes.
  • Garnish with a mountain of fresh coriander and a squeeze of lime.
  • For Onion/Garlic Lovers: Sauté 1 large finely chopped onion and 1 tbsp of minced garlic until they are deep golden-brown before adding the masala for that classic "Dhaba" pungency.
