How to Make Vegetable Kolhapuri Sabji Masala at Home (Step-by-Step)
Ingredients
  • Chilli
  • Coriander seeds
  • Green chilli
  • Cumin seeds
  • Black pepper
  • Turmeric
  • Salt & Spices all in dry powder form
  • Contain Cotton seed oil
Method
  • Par-boil 2 cups of mixed vegetables (cauliflower, beans, carrots, peas).
  • Deep-fry 100g paneer cubes and set aside.
  • Heat 2 tbsp oil in a kadhai.
  • Add 1.5 cups tomato puree.
  • Sauté until the oil floats on top.
  • Stir in 2 tbsp Galaji Vegetable Kolhapuri Sabji Masala.
  • Add the vegetables and paneer with 1 cup of water.
  • Simmer for 5-7 minutes.
  • Garnish with fresh coriander and a lemon wedge.
  • Pair with Bhakri, Phulka, or steamed rice to balance the heat.
  • For Onion/Garlic Lovers: Sauté 1 large finely chopped onion and 1 tbsp of garlic paste until dark brown (almost caramelized) before adding the tomato puree for a truly rustic, "Dhaba-style" Kolhapuri.
